Chaniotiko boureki is a traditional Cretan vegetarian dish. It consists of a unique combination of potatoes, zucchini, and a mixture of local cheeses, with the addition of fresh mint. It stands out for its simplicity, aroma, and deep deliciousness.
Slice the zucchini, potatoes, and tomatoes very thinly. Place them in separate bowls.
In a large bowl, mix the cheeses with the spearmint.
Pour 1/3 of the olive oil into the bottom of a roasting pan and sprinkle with 2 tablespoons of breadcrumbs.
Cover the bottom of the pan with a layer of potatoes. Drizzle 1/4 of the cheese mixture over them.
Add a layer of zucchini, then sprinkle with 1 tbsp of breadcrumbs and drizzle another 1/4 of the cheese mixture.
Add a second layer of zucchini. Arrange the tomato slices (if using) on top and sprinkle with another 1/4 of the cheese mixture.
Add the final layer of zucchini. Pour the remaining olive oil evenly over the surface.
In a bowl, whisk the milk and flour together. Gently stir in the remaining cheese and season with salt and pepper to taste.
Pour the batter over the vegetables and sprinkle with sesame seeds.
Cover with foil and bake in a preheated oven at 200°C for 50 minutes. Then, remove the foil and continue baking at 180°C for another 30 minutes, until the top is golden brown and the vegetables are fork-tender.
Allow the boureki to rest outside the oven for 20 minutes before slicing. Serve it warm or at room temperature; it is just as delicious the next day.
